Guacamole and microgreens

Ingredients: (for 12 mini tortillas)
4 Tortillas
1/4 Red pepper
1 Small chilli
1 Clove garlic
1 Shallot
Coriander
1/2 lemon juice
1 Avocado
Salt
pomegranate berries 
microgreens (arugula) Life in a bag - Buy

Preparation
With an 8cm diameter round cutter, cut the tortillas into mini-tortillas. Each standard tortilla will be good to do 3 mini-tortillas. Arrange them in the oven rack, place the grill on the highest point and let it roast for about 10 minutes at 200ºC. Remove and let cool.

Peel the avocado, remove the seed and mash it with a fork. Add finely chopped chilli, finely chopped chilli, without the seeds, chopped garlic clove and shallot, and chopped coriander. Wrap all ingredients. Season with salt and lemon juice to taste.
Spread the guacamole over the tortillas and spread some pomegranate and microvegeal berries over the top.
